The wine

Mont de Milieu, located on the right bank of the Serein, is one of the most prestigious climats in Chablis, standing out as a ‘flagship’ owing to its ideal exposure and uniform terroir. This south- to south-east-facing climat covers nearly 44 hectares. The Kimmeridgian subsoil, rich in limestone and marine fossils, lends the wine mineral power, saline tension and solar elegance. The grapes are harvested by hand. Fermentation is spontaneous, conducted in stainless steel vats and 500-litre oak casks, followed by 16 months of ageing on the lees.
The pale gold hue shimmers with luminous glints. The nose is refined and fresh, releasing aromas of white flowers, citrus and green apple lifted by buttery undertones. The palate is generous, juicy and saline, showing a poised structure, bright acidity and a long finish laced with notes of lemon and flintstone.

Lucien Le Moine is a haute-couture trader/farmer maison created by Mounir Saouma and Rotem Brakin, a Lebanese couple. After the husband spent some time in a monastery and a first attempt at the art of making wine, then embarked on enology studies, he created his structure in 1999 to offer wine from the finest terroirs. The name of the maison comes from the nickname that his friends gave him as a result of his education in the Cistercian cloister: "Le Moine", the Monk. Lucien was the name given to him by the monks. Today, he produces 38 different crus, ranging from village wines to grand crus. The vinification and élevage are very precise and well done, as delicately and naturally as possible. A must-see.
