The wine
The Chardonnay grapes which produce this Saint-Aubin grow in light and shallow clay-limestone soils. At this domain the fruit is harvested by hand, before a three-month fermentation in barrels. The resulting wine then ages for 15 months, again in barrels. Subtle citrus aromas and mineral overtones are constituents of this cuvée’s great freshness, making it the perfect accompaniment to fish cooked in cream, or goat’s cheeses.
With 18.5 hectares spread over six appellations (which includes the Criots-Bâtard-Montrachet Grand Cru), Olivier Lamy – who runs the estate – is one of the best ambassadors of the Saint-Aubin appellation, which is sadly not well known and produces a superb alternative to Chassagne wines. These wines are perfectly pure, taut and elegant thanks to the carefully ageing work.
The Lamy family has been working in Saint-Aubin since the mid-17th century, about 1640. It was Hubert Lamy, Olivier’s father, who created the estate in 1973 with eight hectares of vines. The property grew in the 1990s before Olivier Lamy joined his father in 1995 after finishing his studies in wine and undertaking several apprenticeships to understand wine better. Father and son bridge the worlds of tradition and innovation together before Hubert passed away in 2022 at the age of 79.
In the vineyard as in the winery, the work is carried out meticulously following organic principals (non-certified). The different terroirs, which are densely planted to concentrate the grapes, are vinified separately in 600-litre barrels (with very little new wood). A not-to-be-missed estate in the Côte de Beaune!
