Savadonnay from Domain Croix et Courbet is a refined blend of Chardonnay and Savagnin grapes. This floral and mineral wine, produced with care, expresses the authenticity of the Jura terroir.
More infoDomaine Croix et Courbet is the result of a collaboration between two experimental winemakers: David Croix, originally from Burgundy, and Damien Courbet from Jura. This collaboration aims to create fresh, elegant and floral organic wines that reflect the unique terroir of Jura. Only a few thousand bottles are produced. The Savadonnay cuvée is, as the name suggests, a blend primarily composed of 70% Chardonnay grapes and 30% Savagin grapes, from three different parcels located in Lya, Au Calvaire et Trémoulette. The plots possess clay-limestone and marl soils. Whole bunches are vinified with gentle pressing and fermentation takes place in 228 litre tanks, which are 5 to 6 years old, for around three months. After complete malolactic fermentation, the wine is aged for 18 months in barrels before spending a further 18 months in different vats to refine its structure.
The resulting wine is floral and mineral with a hint of an oily texture on the palate. This blend provides a unique expression of the Jura terroir, highlighting the distinct qualities of the grape varieties used and the region’s soils.

About the Producer Croix et Courbet
Croix et Courbet is a wine merchant which was founded in 2019 by two winemakers (David Croix from Domaine des Croix in Burgundy and Damien Courbet from Domaine Courbet). They have risen through the ranks in Jura where they have set up base. Originally from the region, Damien Courbet is always on the quest to find wonderful plots of Savagnin and works to build solid relationships with partner winegrowers who use organic methods, or at least, are going through the process of converting to organic agriculture. The same care is taken in the cellar where the idea is that they intervene with the process as little as possible. Natural yeasts are protected, and sulphur is banished. Always on a quest for finding new ways to make wine, they use barrels, stainless steel vats and cement eggs to age the wines, which are known for their balance of power and elegance as well as the complexity of their aromas.
