The wine
This Corbières-Boutenac is produced in low volumes (only one third of the property can lay claim to the local appellation) as it is selected from the finest stocks and the ripest grapes. The wine is dense and structured, with black olive notes to express its southern nature, and a fresh and spicy finish. As a vin de terroir, it is made from whole grape clusters fermented in barriques with indigenous yeasts. It will keep for a good 10 years.
About the Producer Legodar
Formerly known as Grand Lauze, Domaine Ledogar was taken over in 1998 by sons Xavier and Mathieu, eschewing the local co-operative in favour of an individual operation. Organic certification was obtained in 2009, but the Ledogars also try to embrace biodynamic principles. Lunar cycles are followed, ploughing is done by horses and donkeys, and in the summer time, "home-made compost" – made from cow dung and grape pomace – is spread. Two-thirds of the vineyards are planted with Carignan and Grenache, with vine ages between 60 and 120 years. A very promising domain for this young local Boutenac wine!
