More infoProduced in the Volnay appellation, this red wine stems from old Pinot Noir vines planted at the foot of the hillside, on dense, stony soils mainly consisting of red clay, iron and limestone. The parcels nestle at an altitude of 230 m to 280 m, with ideal west and south-east exposure. The parcels are ploughed on horseback and meticulously cultivated with the greatest respect for the soil and biodiversity. The carefully hand-picked Pinot Noir grapes are left to macerate in whole bunches. The wine is matured in Qvevri, traditional, egg-shaped clay vessels buried underground that give the cuvée its name, to develop its depth and velvety texture.
The ruby-red colour reveals an intense and generous nose of red fruit such as strawberry beautifully mingling with hints of spice and candied fruit. The warm, powerful palate displays a superb balance of liveliness and minerality, complemented by delicate floral aromas, gently leading to a lingering, slightly spicy finish.

About the Producer Domaine de Chassorney - Frédéric Cossard
The son of a farmer, Frédéric Cossard quickly became passionate about wine, becoming a wine broker. Then, in 1996, he seized the opportunity to work on several acres of vines in the communes of Saint-Romain and Auxey-Duresses. He gradually expanded his Chassorney domaine as well. The vineyard now extends over 10 hectares and several appellations (Saint Romain, Auxey-Duresses and Pommard).The vines are worked as naturally as possible, the soil is ploughed and, in the cellar, only native yeast is used. A deep respect for the grapes is at the heart of this winemaker’s philosophy, guiding both his work in the vineyard and practices in the winery. The vines are cultivated as naturally as possible, without chemical treatments, and all harvesting is carried out by hand. Only indigenous yeasts are used, and no sulphur is added to the juice or the wines. As a result, Frédéric produces natural wines that stand apart from the more intensively produced Burgundy wines. Alongside his partner, Laure, he founded a wine trading business in 2006, sourcing the finest grapes from historic appellations such as Meursault and Puligny-Montrachet.
