The domain runs a parcel of 380 square metres located on a small rise at the top of the Mazoyères climate, across from Latricières. Old vines, around 60 years in age, plunge their roots into this pebble-strewn terroir which is made up of clay-limestone soil with white marl with the shallow slope providing excellent drainage. Philippe Chéron cares for the vines in an almost organic way. He doesn’t use any chemicals but uses compost instead and works the soil. He also opts for classic vinification, aimed at letting the terroir express itself. For more complexity, the wine is partly made from whole bunches with nearly a week of cold pre-fermentation maceration and spontaneous fermentation using indigenous yeast, followed by a week of post-fermentation maceration. After lightly pressing the grapes, the wine is transferred to barrels, with approx. 25% new oak, to age for 15 months.
This delightful Chambertin is strong-bodied and robust in its youth, becoming more elegant and delicate after a few years ageing. Its maturity gives the wine a concentrated aroma of morello cherry and spices, followed by silky tannins and an excellent finish. A wine which can be stored for a long time.
