They immediately fell for the charm of their current property in Epineuil. Since 2003 they have been cultivating their vines organically, with manual harvests and a careful sorting process in the winery. The vinifications involve as little intervention as possible, and there are no additives apart from a small amount of sulphur just before bottling. Dominique Gruhier adapts his methods to each vintage, aiming only to produce enjoyable wines with great flavour. On the nose, there is a surprising burst of salty and floral notes. The palate is lively with a citrus side to it, making way for an almost spicy finish. The wine will gain in subtlety after a few years of ageing, so you can keep it for around 4-5 years.
