The Vin de Paille from Domaine des Marnes Blanches is a cuvée produced from a vineyard rooted in white marl soils, characteristic of the Jura terroir. It is made from carefully selected Chardonnay, Savagnin, and Poulsard grapes, hand-harvested during late harvests to ensure peak maturity. The bunches are then dried on straw mats for around three months, allowing the natural concentration of sugars and aromas. Vinification starts with a gentle pressing followed by a slow fermentation in vats. The wine is then aged in oak barrels for three years, developing a complex and intense bouquet.
This nectar offers a rich aromatic profile of dried fruits, honey, walnuts, and caramel, with a hint of spice. On the palate, it is unctuous, with sweetness perfectly balanced by a refreshing acidity, delivering an exceptional length. Perfect with desserts, blue cheeses, or enjoyed on its own, this elixir embodies the richness of the Jura terroir.


About the Producer Domaine des Marnes Blanches

Situated in Sainte-Agnès in the Jura, the Domaine des Marnes Blanches (a name inspired by the estate's white limestone soil) is owned by Pauline and Géraud Frémont, a couple of young oenologists. In 2008, they took over 10 hectares located in Sud-Revermont of Savignin and Chardonnay for the white wines and Trousseau, Pinot Noir and Poulsard for the reds. They have also acquired some very old vines. Their entire estate has organic certification and their methods include laying the rows in between the vines to grass and tilling the soil. In the chai, vinifications are carried out with as little intervention as possible as per the owners’ belief that ‘the wine should make itself’. The pressing of the grapes is gentle and vinifications are done plot by plot with sulphur only added ‘homeopathically’. This is an excellent domain whose wines express their terroir in all its complexity and diversity. To follow closely!
