Gondwana is a Saumur wine made from biodynamically-grown Cabernet franc. The vines are around 60 years old and draw their noble features from the pebbly and clay-rich land on which they’ve settled. The roots have to push deep for their nutrients, and yields are low at around 20 hl per hectare. In the same vein, vinification is thorough, including a year-long maturation in amphora containers and ovoid vats.
In the glass it has a deep, ruby colour. Its aromatic bouquet is marked by notes of red fruit (raspberry, forest strawberry, cherry), black fruit (plum), flowers (violet, peony), and liquorice. The supple mouthfeel is supported by delicate but structured tannins. This is a wine that will pair nicely with roasted meat or an autumn vegetable gratin.

About the Producer Fosse-Sèche

Guillaume Pire, who runs this domain, follows biodynamic principles. His cuvées are crafted from vines planted on Jurassic soil with no chalk content (unusual for Saumur-Champigny terroirs) but instead containing flint pebbles that give the wines a truly distinctive identity.
