Having spent some time working in Spain in Ribera del Duero, Frédéric Signonneau decided to come back to Touraine and create his own domain in 2007 – rising out of the remains of the family estate in Cravant les Coteaux. Anxious to produce wine is as natural a way as possible, he isn't totally closed to the idea of intervening. The harvests are carried out by hand, and the domain practises gravity-flow winemaking in concrete vats. Sulphites are only added when this is deemed necessary. His only objective is to craft a wine he likes. Some of the cuvées are made to be kept, while others should be enjoyed young. One thing is for sure, these wines always evoke a positive reaction.
