The wine

Hinotori 5 Year Old is a blend aged in American oak casks. The blend is produced in Japan but it is not known if the whiskies are also. Hinotori, which means “phoenix” in Japan, refers to the company’’s revival in 2019 after an initial attempt to launch production was hampered by several natural catastrophes in the 1950s.

About the Producer Hinotori

Aioi Unibio is a sake brewer in Aichi Prefecture. It began producing whisky in 1949, which it sold under the name Rainbow. The experience was cut short after to devastating typhoons in 1953 and 1959. After a long break, Aioi Unibio began production again in 2019. Tôji (head of sake production) is responsible for fermentation.
