The wine

Spanish sparkling rosé wines, often called Cava, are renowned for their quality and elegance. These wines are primarily produced in Catalonia, where the limestone and clay soils contribute a distinctive minerality. The unique terroir, with its Mediterranean climate, provides the perfect conditions for cultivating the grape varieties used to make Cava. The varieties used for sparkling rosé wines mainly include Garnacha, Trepat and Pinot Noir. The winemaking process follows the traditional Champagne method. After an initial fermentation in stainless steel vats, the juice undergoes a second fermentation in the bottle, essential for developing the fine, persistent bubbles characteristic of sparkling wines. The wines are then matured on the lees for at least nine months, adding complexity and depth to the aromas.
Spanish sparkling rosé wines are characterised by their red fruit aromas of strawberry, raspberry and cherry, complemented by floral notes and sometimes hints of brioche and almond resulting from ageing on lees. On the palate, they are beautifully fresh, with a lively acidity, a creamy texture and a long, elegant finish.
