This Burgundy ‘La Piquette’ is made from vines planted on clay-limestone soil averaging some 40-year-old. It is a blend of Chardonnay, Pinot Noir and Aligoté, the 3 main grape varieties in Burgundy.
The vineyard has followed organic viticulture practices since 2020 and is in the process of converting to biodynamic viticulture since 2021. The winemaking process encourages using 100% whole bunches, fermentation in vats for 8 to 10 days with no added inputs, and daily pumping over and punching down of the cap. The press juice and free-run juice are blended, and the wine is aged for 7 to 8 months in casks of 1 to 5 wines. Malolactic fermentation occurs in the cask, and the wine is bottled at the estate.
On the nose, this wine displays a rich and complex aromatic bouquet. Aromas of raspberry dominate, and spicy notes emerge subtly, evoking hints of black pepper and cinnamon, adding a warm, spellbinding dimension to the whole.
This wine is equally seductive on the palate. The clean attack is marked by the juicy freshness of the raspberry, which coats the palate. The spices continue to reveal themselves with balanced intensity, adding complexity to each sip. The long and persistent finish displays a delightful minerality.
