The domain is made up of three hectares of Chenin and produces three cuvées of white Saumur. Michel Chevré created the domain in 2007. Before founding his own domain, he worked with Thierry Germain at Domaine des Roches Neuves. He helped the domain convert to organics in 2002 and to create their magnificent L’Insolite cuvée. Michel Chevré’s white wines are among the finest in Saumur. The doman is progressively being handed down to his son Thibaud.
Subtle and fresh, rich in notes of white fruit, white flowers and citrus fruits, this wine perfectly balances power and mineral persistence. Originally, old Chenin vines (grown on clay-limestone soils) were vinified in 400-litre barriques and Burgundy pièces. The wine was also aged on fine lees for 12 months. And, of course, all these steps were done at low temperatures to preserve the wine's fruity notes.
