Damijan Podversic’s white wine vinification involves protracted maceration (60 to 90 days) to produce superb orange wines. For the winemaker, this is not about following a trend but finding the best method to capture the full quality and complexity of the grape. Damijan Podversic’s white wine express their terroir and could not be further removed from “technical” whites.
