About the producer
The Chelo distillery was founded by Michel Sajous in Saint-Michel-de-l’Attalaye in the north of Port-au-Prince. Distillation is carried out in a small bagasse-fired pot still equipped with a six-plate column. Chelo is one of the producers selected by Luca Gargano and Daniele Biondi during a trip to Haiti in 2012 that helped introduce Clairins to a wider public.
About the wine
A single cask Clairin Sajous (#CARSA4) distilled in 2016 and bottled in 2018, aged for 19 months in casks from the famous Caroni distillery in Trinidad and Tobago, which is now closed. This cask was selected by Daniele Biondi in 2017 during a tasting of 54 casks of Clairin.
