Domaine Vincent Aviet in Montigny-les-Arsures, in the Jura, is now owned by Vincent, Lucien's son. On a small vineyard of just 6 hectares, he produces reputed and well-appreciated wines in the classi Jura style – these are beautiful, terroir wines. This domain's vin jaune and Trousseau cuvées are particularly superb.
Lucien Aviet, known to his friends as Bacchus, crafts a red Arbois named Cuvée des Docteurs. The Poulsard grapes used are an emblematic variety of the region, coming from two localities in the appellation: Château Gimont and L’horloge. The first is defined by a grey marl terroir while the second combines iridescent and black laminated marl. His methods are defined by a sustainable growing culture that respects the environment, encouraging the vines to draw out the true substance of their terroir. The grapes are harvested by hand and are destemmed when they arrive in the cellar. There the must is fermented using indigenous yeasts and is macerated without removing the skins for three weeks. Pumping over is done to ensure gentle extraction. The wine is then aged in barrels for 15 months and bottled without prior fining.
We recommend opening this wine a short while before serving to fully appreciate the red fruits and sweet spices that emanate from it, introducing a palate that is full of flavour, is juicy and structured by crisp tannins.
