Let’s head to the south of France, to the west of Tavel in the Southern Rhône region, to discover what winemaker Valentin Valles has achieved with this French wine called Déjà (which translates to already). This wine is produced from Syrah vines, a typical local grape variety, encouraged to draw the nutrients they require to flourish from soils consisting of sand and silica by means of environmentally friendly organic and biodynamic cultivation methods. Ever since he moved into this former stonemason’s workshop, the winemaker has been inspired by Eric Pfifferling, the owner of Domaine de l’Anglore, with whom he learned the ropes. This is why his winemaking process is low-intervention and natural. Inputs are not used in the winemaking process, and sulphur is only added sparingly, as a preventive measure. In this case, the Syrah grapes undergo direct pressing and part of the harvest is macerated quickly.
This succulent wine seduces with its suave character and irresistible fruit.
