Pascal Cotat is one of the Sancerre appellation’s top winemakers. He created his doman in Chavignol, a city known for its goat’s cheese. He inherited the family domain which is shared with his cousin (François), 2.3 hectares. This small terroir is of top quality, with limestone giving vibrancy and minerality to its Sauvignon grapes. He also owns vines in the Les Monts Damnés and Grande Côte parcels.
The Monts Damnés from Domaine Pascal Cotat is a Sancerre crafted from vines perched on steep slopes, spanning around 3 hectares. The terroir consists of limestone soils rich in Kimmeridgian marl, imparting remarkable minerality to the Sauvignon Blanc. The vines, aged between 25 and 50 years, are cultivated with environmentally respectful practices, ensuring a sustainable approach to viticulture. The grapes are hand-harvested, ensuring a rigorous selection of the best fruit. The vinification process is traditional and non-interventionist, with a natural fermentation in both stainless steel tanks and oak barrels. The wine is then aged on fine lees for 12 to 18 months, without filtration or fining, preserving its purity and complexity.
In the glass, this Sancerre reveals a pale yellow hue with green highlights, offering intense aromas of tropical fruit, citrus, white flowers, and a distinctive mineral signature. On the palate, it is rich and complex, with a vibrant acidity and a long, lingering finish.
