While you may not have heard of Les Horées before, we highly recommend that you get acquainted with this rising star without further ado!
At its helm is Catharina Sadde, a German-born winemaker married to Guilhem, who founded the estate named in tribute to the joyful celebrations of ancient Greece. The inaugural vintage of this tiny one-hectare property was released in 2019 and quickly drew attention. Little wonder, given Sadde’s pedigree: she studied at Germany’s leading viticultural school and at Montpellier SupAgro, then honed her craft with some of Burgundy’s most esteemed growers: Cécile Tremblay, Comte de Vogüé, Marquis d’Angerville and, no less than Domaine de la Romanée-Conti. Quite the track record!
Her approach in the vineyard is meticulous and profoundly respectful of nature. The estate is certified biodynamic, and a horse is used to plough the soils, helping to keep them open and alive. Today, Catharina and Guilhem tend just over three hectares of Pinot Noir and Aligoté.
In the winery, the same precision carries through. Sulphur is avoided except for the slightest homeopathic dose at bottling, and native yeasts are preserved. The resulting wines are marked by their incredible finesse, pristine freshness and airy texture. Aromatic, lively and deeply seductive nectars.
Les Horées, founded in 2019 by Catharina and Guilhem Sadde, is a 1.3-hectare vineyard located in Beaune. Their Red Burgundy cuvée is primarily produced from Pinot Noir, grown on clay-limestone soils. The grapes are harvested by hand, with meticulous attention to quality. Around 80% of the whole clusters are used during vinification, fermenting with indigenous yeasts over seven days in stainless steel tanks, with no sulphur added until after the malolactic fermentation is complete. The wine is then aged for 12 months in old oak casks, preserving the purity of the aromas without overwhelming woodiness.
This Pinot Noir reveals unique fresh red fruit aromas, remarkable vibrancy, and a silky texture. The winemakers follow biodynamic and eco-friendly principles, ensuring that every step, from vineyard to cellar, is done with great care, truly reflecting the unique Burgundy terroir.
