This Champagne house was established in Bisseuil in 2000 by Xavier Gonet and his wife Julie Medeville. It comprises 12 hectares of vines dispersed across 8 villages. It has shot to fame and its star is still rising. Renowned for the quality of its blends and excellent vinification (without malolactic fermentation), it produces wines which subtly combine power with finesse. The secret of their success is undoubtedly barrel fermentation.
Now recognised among the leading winemakers of the Champagne region, Xavier and Julie Gonet-Médeville present an Extra-Brut rosé crafted predominantly from Chardonnay (70%) – a grape that plays a central role across the estate – complemented by Pinot Noir and a small proportion of Ambonnay red wine (3%). The grapes draw their vitality from the chalky soils of the Grand Cru villages of Bisseuil, Le Mesnil-sur-Oger and Ambonnay. Traditional vineyard practice are paired with manual harvests, allowing for careful selection of the berries. In the winery, the grapes undergo gentle pressing, and once settled, the juice is vinified in old barriques. The wine is bottled seven months after the harvest and aged in the cellar for three years on laths before disgorgement. This is followed by a further four months’ rest in bottle prior to release.
Fresh and intensely fruit-forward, this Extra-Brut rosé offers fine balance through vibrant minerality and a delicate mousse.
