In common with many domains, the history of Nicolas Rossignol's property is a family affair. After travelling around South Africa and learning his craft in various regions (Joseph Voillot in Volnay, Louis Latour in the Ardèche, le Vieux Télégraphe in Châteauneuf-du-Pape, and La Cardonne in Bordeaux), Nicolas Rossignol established his own domaine in 1997 with 3 hectares of vines in the communes of Pernand-Vergelesses, Aloxe-Corton, Beaune, Pommard, and Volnay. In parallel he had been vinifying wine on the Rossignol-Jeanniard family domaine since 1994. You may recall that the two domaines merged in 2011 and retained the "Domaine Nicolas Rossignol" label. Over the years, the owner has continued to broaden his horizons, acquiring new land to supplement his domaine, which now spans some 17 hectares.
One of Burgundy's essential grape varieties, Chardonnay is renowned for producing concentrated, fragrant wines. It thrives in the region's mild climate and ideal exposure. The Chardonnay vines grow at mid-slope on the Vergelesses isles, on red clay and limestone soils that are particularly rich in iron. The Premier Cru is produced from vines of an average age of forty years, blended with vines aged around sixty years and harvested exclusively by hand. During vinification, punching down and pumping over are also carried out to oxygenate the wines before they are matured on fine lees. In the cellar, the berries undergo spontaneous fermentation for six to eight days, thanks to the yeasts naturally present on the fruit.
The attack on the palate is marked by red fruit aromas combined with good acidity. Tension and minerality are perfectly balanced by great freshness. This is a cuvée that can be enjoyed young, but also after a few years' cellaring.
