This Vosne-Romanée Aux Champs Perdrix by Pierre Girardin is an exceptional red wine produced using Pinot Noir grapes in the prestigious village of Vosne-Romanée. Its terroir is characterised by the clay-limestone soils, favouring the production of wines of great finesse and complexity. Harvests are carried out by hand with 80% of the bunches destemmed to preserve the purity of the fruit. Fermentation takes place using indigenous yeasts in oak barrels, around half of which are new, followed by a 10-month ageing period. This meticulous process helps to develop deep aromas and a balanced tannic structure.
On the nose, the wine is rich and complex with notes of Morello cherries, raspberries, fresh strawberries and pressed violets. The palate is energetic with a wonderful structure and long finish. This wine would pair perfectly with dishes such as roasted duck, coq au vin or a fillet of beef.
