The Chassagne-Montrachet vieilles vignes from Domaine Jean-Claude Bachelet originates from clay-limestone soils typical of the appellation. The winemaking process involves fermentation in stainless steel vats, with native yeasts promoting natural alcoholic fermentation. This stage is followed by a cold maceration to extract the aromas and tannins gently. The wine is aged in French oak casks, with 20–30% new oak, for around 12 to 18 months, adding subtle hints of vanilla and spices to the juice.
This nectar is characterised by complex red fruit like cherry, strawberry and raspberry, complemented by black fruit like blackberry with floral nuances of violet and a touch of spice. Elegant and beautifully balanced on the palate, it offers fine tannins and lingering aromas. It will pair wonderfully with grilled meats, roast poultry and soft cheeses.
