Domaine Jean-Claude Bachelet produces this Saint-Aubin 1er Cru cuvée from vines planted on a terroir of clay-limestone soils, enjoying an excellent exposure that encourages optimal grape ripening. The winemaking process starts with a gentle pressing, followed by fermentation in oak casks, including a proportion of new wood, to give the juice complexity and structure. The wine is generally aged for 12 to 18 months, during which time it develops its aromas and depth.
This Saint-Aubin offers delicate aromas of white flowers and white-fleshed fruit like apple and pear, complemented by citrus notes of grapefruit, lemon and a subtle hint of hazelnut. On the palate, it reveals a fine minerality, balanced acidity and remarkable length. This elegant, complex cuvée is the perfect partner to seafood, poultry and mature cheeses.
