From the outset, he asserted a singular vision of winemaking: an artisanal approach that respects nature, with the guiding principle of allowing the grape to express its origin freely.
A lover of all things living, Alexandre Plassat primarily grows Chardonnay, paying meticulous attention to soil health and surrounding biodiversity. Each vine is tended with careful manual work, far removed from standardised practices. The aim is clear: to preserve the vine’s natural balance and encourage the purest expression possible, without constraint or excess.
This philosophy extends into the winery. Vinifications are natural, without inputs, fining, filtration, or added sulphur. The winemaker at the head of the estate started out working alongside renowned winemakers such as Jean-François Ganevat. Here he presents a Vin de France called Les Humains, an astonishing wine that combines Chardonnay, a grape variety common in the region, with Riesling, a variety more commonly found in Alsace. These varieties have been cultivated meticulously, following environmentally friendly principles that respect biodiversity and place great importance on the life of the soil. In the winery, they are meticulously vinified to produce authentic, terroir-driven no-nonsense wines. Native yeasts trigger fermentations and sulphur has no place in the process.
Tasting reveals a pale yellow colour with hints of green, giving way to a delicate bouquet of white fruit, citrus and white flowers, enlivened by a fine minerality on the palate.
