Jérôme Saurigny was a passionate and meticulous young winemaker when he decided to establish his own domain and name it after himself. He settled in the heart of the Loire Valley where he cultivates the region’s flagship grape varieties, including Chenin, Cabernet Franc, Cabernet Sauvignon, Gamay, Sauvignon and Grolleau. Passionate about natural wines and committed to protecting biodiversity, the winemaker tends his vines with the greatest respect for the lands. Each parcel receives specific care depending on its needs, to allow the personality of each one to shine through. In the winery, the philosophy is the same. No sulphur or other inputs are used in the vinification process. Fermentation is achieved thanks to naturally occurring yeasts in the grapes. It’s against this peaceful backdrop that the winemaker produces fruity, authentic and flavoursome vintages, perfectly reflecting the region’s grape varieties.
Known for being one of the most common grape varieties around the world, the Cabernet Sauvignon is a cross between Cabernet Franc and Sauvignon Blanc. The vines, traversing through the Angevin terroir, divided across the villages of Saint-Aubin-de-Luigné, Saint-Lambert-du-Lattay and Chaudefonds-sur-Layon, are carefully grown, respecting the soil and the fruit, according to the principles of organic farming, with the aim of producing terroir-focused wines. The same philosophy is followed in the cellar. Vinification takes place naturally using minimal intervention, without the addition of enological products and with minimal amounts of sulphur.
The ruby-red colour reveals an intense nose marked by aromas of red fruits like cherries and blackcurrants. On the palate, the indulgent fruit aromas pair perfectly with the silky tannins, leading to a balanced and well-rounded finish.
