The Pinot Noir vines thrive on healthy, sustainable viticulture that respects organic farming principles. Neither fertilisers nor chemical weedkillers are used, and yields are carefully controlled. The north-facing vines are harvested entirely by hand when the grapes are at optimum ripeness. In the winery, the grapes are destemmed and cold-macerated for around ten days before indigenous yeasts kick-start the fermentation process. Next, the grapes are pressed in a traditional vertical wooden press. Lastly, the wine is matured in French oak casks, 30% of which are new, before being bottled, without fining or filtration.
The ruby-red colour reveals a nose characterised by luscious red fruit aromas. Round and fresh throughout, this wine is perfectly structured by fine, silky tannins, leading to a long, persistent finish. This wine offers great ageing potential.
