Nestled between the Atlantic Ocean and the South African planes, Crystallum stretches over two hilly areas in the Walker Bay region. Created in 2007 and led by two brothers, Peter-Allan and Andrew Finlayson, the domain grows Burgundy varieties on rich South African soils and delivers superb single-varietal wines of Pinot Noir and Chardonnay. Sometimes from a single plot, sometimes from several, the wines are testimony to the skill of the winemakers and are absolutely unique.
Nestling in the heart of the Hemel-en-Aarde region, the Pinot Noir vines, averaging 12 years in age, reap the benefits of healthy, sustainable viticulture, adhering to organic farming principles. The grapes are harvested entirely by hand, and the vinification process is carried out with little intervention. The grapes, 50% of which are left as whole bunches, macerate for four weeks before undergoing spontaneous fermentation triggered by indigenous yeasts present on the grapes. Lastly, the wine is matured in casks, 20% of which are new, before being carefully bottled, without fining or filtering.
The deep red colour promises a fragrant bouquet. On the nose, the wine is expressive, with powerful aromas of red fruit, such as cherry, complemented by spicy notes. The lively tannins strike a wonderful balance with the luscious fruit, leading to a smooth, lingering finish. The wine offers great ageing potential.
