German-born Bastian Wolber is a promising young winemaker with a career spanning several major European wine regions. Bastian Wolber started out as a passionate and conscientious young German working for a vineyard in Moselle and then for another estate in Alsace. There, he perfected his approach, developing a rigorous work ethic and a deep respect for living things, two values that would stay with him throughout his career. He later joined his brother Christoph working in a number of Burgundy estates, before discovering the wines of Jean-François Ganevat, renowned Jura winemaker, who had a lasting influence on his philosophy of wine and encouraged him to become more involved in natural approach to viticulture with a deep respect of the terroirs.
In 2019, Bastian returned to Germany to craft his first cuvées, while continuing his studies at the University of Burgundy and working with revered estates across the region. Slowly but surely, he pieced together a few plots of Pinot Noir and Chardonnay, which now form the core of his production. Since 2022, based in Volnay, he has focused entirely on his own project, tending or sourcing meticulously chosen parcels in the Côte de Nuits, Côte Chalonnaise and other outstanding Burgundian sites.
A passionate advocate for natural wines and traditional methods, Bastian pursues a deliberately low-intervention approach without inputs or sulfites, and an unwavering dedication to organic and biodynamic principles, both in the winery and in the vineyard. His cuvées are truly fine natural wines, reflecting the purest expression of the terroir, with remarkable minerality and precision. In the winery, his methods follow these same principles: whole bunch vinification, ageing in carefully selected old barrels, and no unnecessary inputs. The result lives up to his commitment: precise, balanced and intense wines, imbued with great authenticity and a unique personality.

Having been on our radar for a while now, Bastian Wolber has embarked on his own wine-production journey. Having been inspired by the work of Jean-François Ganevat, a veritable legend from the Jura wine-growing region, Wolber founded his estate in Burgundy, the region where he studied. His passion is unstoppable! He works simultaneously with his own plots as well as at Domaine Bizot where he tends to Chardonnay and Pinot Noir vines. This Vin de France is made using Riesling grapes from vines located in a continental climate with semi-continental influences. They draw all the necessary nutrients needed for their development from deep within the soil, thanks to environmentally sound organic and biodynamic growing methods. In the cellar, the grapes are vinified using a low-intervention method to allow the terroir to shine through.
This cuvée has a pale yellow colour with green glints, revealing notes of citrus fruits, white fruits, fine sweet spices and flowers. It is supple on the palate with a fine minerality.
