Adeline Houillon and Renaud Bruyère created their domain in 2011 with 75 hundred square metres of vines close to Arbois. The vineyard has since expanded and now spans 5 hectares. They grow local varieties such as Savagnin, Trousseau and Chardonnay following biodynamic principles and vinify them as naturally as possible. They strive to find the perfect balance between terroir, vintage and grape variety.
The Savagnin vines are grown on clay-limestone soils according to the principles of biodynamic farming. No fertilisers or chemical weed killers are used, allowing the vines to draw all the necessary nutrients needed for their development from the soil. The grapes are harvested entirely by hand in order to preserve their quality. In the cellar, the winemakers vinify naturally without using additives. The grapes undergo spontaneous fermentation using indigenous yeasts. The vines are topped up, meaning that during the ageing process, which occurs in wooden barrels, the winemaker compensates for the evaporated part of the wine using the same vintage. Finally, the cuvée is bottled without sulphites or filtration.
The golden colour unveils a nose marked by subtle aromas of citrus fruits alongside hints of hazelnut. The rich and concentrated palate reveals a fine acidity leading to a long finish.
