Adeline Houillon and Renaud Bruyère created their domain in 2011 with 75 hundred square metres of vines close to Arbois. The vineyard has since expanded and now spans 5 hectares. They grow local varieties such as Savagnin, Trousseau and Chardonnay following biodynamic principles and vinify them as naturally as possible. They strive to find the perfect balance between terroir, vintage and grape variety.
Adeline Houillon and Renaud Bruyère head this estate, established in 2011, and bring us this red Arbois produced from Trousseau, another typical Jura grape variety. The Trousseau vines used to produce this wine flourish in a semi-continental climate, and are encouraged to draw the nutrients they require to thrive from marl and limestone soils, by means of organic and biodynamic cultivation methods. In the winery, the same commitment to preserving the terroir and the identity of the grape varieties continues with low-intervention vinification methods that allow the native yeasts to trigger the fermentation process.
Tasting reveals an intense wine driven by notes of red fruit, white pepper and sweet spices. The abundant tannins refine after a short cellaring period. Keen wine lovers will enjoy pairing this wine with grilled meats or mature cheeses, as the salt will accentuate the fruitiness of the nectar.
