Originally from Anjou, Olivier is the grandson of a winemaker and the younger brother of Jo Pithon, a respected figure in the Coteaux du Layon (whose estate was later acquired by Domaine Belargus). After learning the ropes in the family vineyard and gaining experience in several estates, including a few years in Bordeaux, he chose to settle in the rugged landscapes of Calce in 2001. His vineyard, perched at 300 metres above sea level, is managed with a holistic organic and biodynamic approach. Alongside biodynamic preparations 500 and 501, he replants hedgerows, sows cereals between the rows to encourage permanent cover crops, and introduces animals (especially sheep) into the vineyard from October to April. Olivier Pithon’s wines are authentic, well-balanced, and deeply expressive. Grenache (in all its forms: Noir, Gris, Blanc), Maccabeu, Carignan, and Mourvèdre thrive here, rooted in a patchwork of limestone, marl, and schist soils.
Olivier Pithon grew up surrounded by vines, and very quickly developed a love of wine and a job well done. In the cellar as in the vineyard, his approach is precise when it comes to human intervention and the tastings that are essential to making wine. In addition, great respect for the raw material is paramount to him. At an altitude of around 300 metres, the vines stand at the heart of a rich and breathtaking landscape, between the Mediterranean, the Pyrenees and the Corbières. A natural approach, combined with biodynamic methods, allows the soil and biodiversity to flourish, while producing terroir-driven wines and, in particular, a natural sweet wine.
The garnet-red colour and tile-red tints reveal an expressive nose with aromas of fig, cherry and cocoa. On the palate, fruity flavours delicately mingle with elegant tannins, leading to a flavourful, lingering finish. This cuvée will stand the test of time beautifully.
