The Mont de Milieu hill located in the heart of Chablis features a unique terroir that is bathed in sunlight from dawn till dusk. The Chardonnay vines grow on soil composed of clay, limestone, and small pebbles. The grapes are harvested by hand and each plot is sorted and vinified separately. The fruit is pressed using a pneumatic press and is placed in stainless-steel tanks located in underground cellars. Each step, from the reception of the juice to the runoff, is done using gravity. The fermentation process uses the native yeast, and the maturation process is conducted in the most natural manner possible.
The colour of this wine is enhanced by shimmers of gold, with bright notes of peach and quince. The intensely crisp palate flaunts aromas of citrus, perfectly balanced with a lovely minerality, and leading to a long, luscious finish.
