Sparkling white wines from the Jura region with the Vin de France appellation are mainly produced from Chardonnay and Savagnin grapes grown on marl and limestone soils. The Jura terroir, combining a continental climate with mountain influences, gives these wines remarkable minerality and freshness. The grapes are gently pressed, and the first fermentation is performed in temperature-controlled stainless steel vats to preserve the fruity aromas. The second fermentation, following the traditional method, takes place in the bottle and lasts several months.
This stage allows the fine bubbles characteristic of sparkling wines to develop. The maturation on lees period of at least 12 months imparts a remarkable aromatic complexity to the wine, revealing notes of white fruit, like apple and pear, white-fleshed fruit such as peach and apricot, along with subtle notes of walnut, almond and brioche. On the palate this nectar is lively and fresh, with a delicate foam and beautiful acidity.
