Valentin Morel, who took over from his father Jean-Luc Morel after 30 years in the trade, produces an elegant, characterful Chardonnay ‘Les Trouillots’, offering remarkable vivacity and bitters on the finish. The Chardonnay vines, over 35 years old, grow on a terroir of Gryphaea-rich limestone and clay, currently in the process of converting to organic and biodynamic methods. The wine is fermented in casks and bottled without filtration or added sulphur. This cuvée is a treat for the taste buds, giving the Jura chardonnay the freedom it requires to express and reveal itself.
On tasting, it reveals a blend of ripe yellow fruit, liveliness, fatness and complexity, reflecting the very specific character of Poligny chardonnay. This wine should be aerated before drinking (in a decanter, for example), to allow its full potential to express itself. In terms of food and wine pairing, how about a fricassee of chicken with sage?
