Nestled between the Atlantic Ocean and the South African planes, Crystallum stretches over two hilly areas in the Walker Bay region. Created in 2007 and led by two brothers, Peter-Allan and Andrew Finlayson, the domain grows Burgundy varieties on rich South African soils and delivers superb single-varietal wines of Pinot Noir and Chardonnay. Sometimes from a single plot, sometimes from several, the wines are testimony to the skill of the winemakers and are absolutely unique.
This Pinot Noir, nurtured in the unique climate of Overberg, reveals the magic of a culture that respects the environment and is rooted in biodynamic traditions. The winemaking process for this cuvée is carefully devised and unique to the domain. In the winery, indigenous yeasts alone trigger fermentation, and intervention is kept to a minimum. The bunches are hand-harvested and transported in small crates to ensure optimum quality.
This wine displays a ruby-red colour, the prelude to a mesmerising sensory journey. Aromas of black cherry and delicate notes of undergrowth awaken the senses. On the palate, the silky texture leads to complex red fruit flavours and an elegant finish.
