Taking over from his father Jean in 1991, Jean-Marc Pillot boosted his domaine: increasing the area, developing bottling and particularly increasing export sales. Jean-Marc Pillot has also distinguished himself by a great mastery of woody aromas (only 30% new barrels). Since 2005, élevage has been refined down to 6 to 8 months in stainless steel tanks, before natural stabilisation and final bottling.
Chardonnay vines flourish beautifully on the clay-limestone soils of the climat ‘Les Macherelles’. The west-facing vineyard benefits from the perfect amount of sunshine for the grapes to attain optimum ripeness. Each vine is tended attentively, with meticulous year-round tilling and cultivation, enabling the Chassagne-Montrachet terroir to reveal its distinctive character, authenticity and concentration. In the winery, the winegrower demonstrates his talents as a winemaker. This cuvée has the particularity of being aged for several months in oak casks, 20% of which are new, before being bottled.
The golden colour reveals a fresh and refined bouquet of white flowers complemented by notes of lemon and a hint of tangy green apple. A perfect balance is struck between generous volume and concentrated fruit flavours leading to a deliciously long, flavoursome finish.
