About the producer

Henri Chauvet left banking and office work in 2021, to settle on the gravelly hillsides of the Saint-Nectaire region. Having just turned 30, he obtained an advanced technical diploma in viticulture and winemaking through correspondence and went on to train with Jérôme Bressy at his Gourt de Mautens estate, in the southern Rhône Valley. He subsequently acquired the Sauvat estate, comprising more than ten hectares of vines. Each parcel of Chardonnay, Pinot Noir and Gamay flourishes on volcanic soils composed of blue marl. Henri Chauvet has been converting his vineyard to organic viticulture since the day he arrived, convinced of the benefits for vines and wine and, above all, driven by a desire to get back to the land. Even if his methods have much in common with natural wines, Henri Chauvet doesn’t want to be pigeon-holed, so he retains complete freedom to create his authentic, flavoursome wines.

About the wine

Au Chant de la Huppe is a cuvée produced by Domaine Henri Chauvet in the Côtes d’Auvergne. This region boasts a unique volcanic terroir, characterised by basalt soils, giving the wines a distinctive minerality and exceptional depth. The grapes are harvested by hand, ensuring a rigorous selection of bunches to preserve quality. The cuvée is mainly produced using grape varieties native to the region, in particular Pinot Noir, Gamay and Chardonnay, which express all the richness of this volcanic soil. The winemaking process is traditional, with fermentation conducted in stainless steel vats to preserve the freshness and aromas of the grape varieties. The wine is matured in vats or casks, in line with the desired profile, to refine its structure and complexity.
This nectar reveals subtle aromas of ripe red fruit, most notably cherry, with spicy hints, enhanced by a minerality typical of volcanic soils. On the palate, this elixir is characterised by its finesse, balance and lingering finish.
