The Cristom Eola-Amity Hills cuvée is produced from Chardonnay grapes grown on the estate and in neighbouring vineyards. The volcanic soils, which allow the vines to draw on all the nutrients they require to thrive, are tended with care, and the highest respect for the environment and biodiversity. The same rigour is applied in the winery in order to produce the purest expression of Chardonnay. The harvested grapes are then pressed with a quarter of the bunches left whole. The must then ferment in barrels using native yeasts. The cuvée is then aged on its lees for six months in new and old French oak casks.
The bright colour reveals a bewitching bouquet exuding with aromas of ripe white fruit combined with delicious notes of brioche. The rich, complex mouthfeel reveals a delicate acidity perfectly integrated into a smooth texture, leading to a deliciously persistent finish.
