This sparkling wine from the Anjou region is crafted exclusively from Chenin Blanc. Its fine, delicate mousse stems from an ancestral winemaking method. The grapes, carefully hand-picked, are vinified in stainless-steel vats. Fermentation occurs naturally with no added sugar, and the wine is then left to age on laths for two years. This zero dosage Crémant displays a natural acidity that perfectly balances its richness, offering a harmonious and finely balanced tasting experience.
This elegant wine reveals a sophisticated and layered bouquet, opening on vivid notes of green apple, pear and white flowers – classic expressions of Chenin Blanc. Subtle hints of toasted bread, brioche and yeast follow, giving way, with time, to touches of honey, hazelnut and almond. The lively mousse enhances the wine’s refreshing texture.
The bright bead of this Crémant de Loire pairs beautifully with the delicate sweetness of grey shrimp, and its freshness complements the briny intensity of oysters perfectly – ideally, flat oysters from Cancale.
