The soul of Chablis is embodied in this cuvée from the Clément Lavallée estate, a symbol of family expertise. Made from Chardonnay grapes and grown using environmentally-friendly methods, this wine draws its richness from 50 year old vines rooted in limestone and clay soils.
The grapes are harvested at optimal ripeness, paying particular care to their quality. Vinification takes place on the family estate, where the second generation of winemakers, brother and sister Lavallée, continue the tradition.
The wine is vinified in stainless steel vats before being aged in oak barrels, which adds hints of vanilla to its aromatic profile. The end product is a Chablis that meets all expectations: tight, mineral-led and with a refreshing acidity. On the nose, we find subtle aromas of flint, citrus fruits and white flowers. The palate offers generous volume, a plentiful texture and elegant tension.
