This Aligoté cuvée, classified as a Vin de France, enjoys meticulous care at every step of its production. Harvests are carried out by hand, followed by a second sorting on the table, an example of the attentive work of talented winemaker, Raphaëlle Guyot.
The Aligoté juice is obtained by direct pressing, followed by a light decantation. Its fermentation takes place through a spontaneous method using indigenous yeasts. For 12 months, the wine rests in oak barrels, allowing subtle and balanced ageing.
Minimal sulphur is used, added just before bottling, demonstrating the estate's commitment to using environmentally-friendly practices.
On the nose, it unveils a wonderful complexity with mineral notes blending with aromas of citrus fruits, lemon, grapefruit and vanilla. This wine totally envelops the palate, offering a delightful tension and the perfect balance between freshness and complexity.
