Maison Savart describes itself as a producer of "auteur" wines. Lying 10 km west of Reims, the domain is in the village of Ecueil which has specialised in growing Pinot Noir for many years. Frédéric Savart has made the 4 hectare property his own, continuing his father's work on this "laboratory of terroirs". He produces exciting, fresh and quite varietal champagnes always with a predominance of Pinot Noir. Its limited production (40,000 bottles approximately) make it well worth the detour!
With only 6,857 bottles produced, this cuvée from Frédéric Savart is the product of a climatic twist of fate. Faced with challenging weather conditions for almost a year, the winemaker took the decision to gather the grapes from the villages of d'Écueil and Trépail, both classified as Premier Cru in the Montagne de Reims. These grapes, normally used for other cuvées, such as L’Accomplie, Le Mont Benoit and Le Mont de Chrétiens, gave birth to this exceptional yet unintentional vintage. This emotionally heavy decision is symbolised by a drop on the label, often interpreted as a tear.
Fermentation and ageing of this Chardonnay takes place in oak barrels, giving the wine a final dosage of only 2g/l, thus classifying it as an Extra Brut. It is characterised by aromas of citrus fruits, lemon and grapefruit, with subtle notes of pear, vanilla and brioche.
On the palate, this cuvée is balanced with fine and velvety bubbles, offering a fresh and lively Blanc de Blancs Champagne.
