Les Follettes is produced from organic vines planted between 1960 and 1979, mainly on the terroirs of Petits Picotins (55%), Grand Picotins (5–10%), Aux Fourches (30–35%) and Saucours (5%). The soil of these terroirs offers a unique complexity, contributing to the richness of the wine. The harvest is meticulous, with around 20% whole bunches in 2021, giving the wine structure and subtle aromas. Vinification involves light daily pumping over and only two punch downs at the end of fermentation, with a vertical press to preserve the delicate aromas. The wine is aged in new and recent casks (50% of each) for around 12 months, adding subtle notes of caramel and discreet hints of ageing.
On the nose, this nectar displays a slight reduction and animal notes, with a pleasant vegetal touch. On the palate, the substance is delicate, silky and well balanced, emphasising restrained red fruit and a pleasant herbal touch.
