Caroline Morey’s Chassagne-Montrachet 1er Cru is a white wine of remarkable complexity, originating from a typical clay-limestone soil enriched by layers of Kimmeridgian marl. Only the ripest, healthiest grapes are carefully selected during the manual harvest. The winemaking methods are in keeping with Burgundy traditions and include gentle pressing, fermentation with native yeasts and strict temperature control to preserve the freshness of the aromas. The wine is aged in oak casks for around 12 months, with a carefully balanced percentage of new wood.
This process adds a subtle touch of wood, providing greater intensity and complexity without overpowering the fruity profile of the grape variety. Seductive aromas of lemon, apple, vanilla and notes of flint rise from the glass. On the palate, this Chassagne-Montracher 1er Cru offers flavours of ripe yellow fruit, a beautifully balanced acidity and a persistent finish.
