Thomas Pico spent his childhood in the village of Courgis. His father and grandfather, also wine growers, passed on their passion for the great Chardonnays of Chablis. In 2004, after completing a diploma in engineering, he took over 8 hectares of vines, which he immediately converted into organic farming and created the domaine of Pattes Loup. His wines are models of elegance and among the best Chablis wines.
This Chablis wine from the Pattes Loup estate of Thomas Pico has become the essential benchmark for vineyards in Chablis. The wine is characterised by its fantastic fruitiness and ability to be enjoyed even when young. The winegrower strongly opposes the use of any synthetic products, instead preferring manual and natural methods that preserve the integrity of his vines. As yields are limited, the resulting wines offer remarkable depth.
On the nose, this late-harvested wine unveils aromas of well-ripened fruit accompanied by touches of cinnamon and mint. After a little oxygenation, original notes of honeysuckle and camomile present themselves to offer a very distinct and expressive bouquet. On the palate, the nectar is delightful and full of flavours of quince, bergamot, and touches of green apple. The discrete presence of minerality makes this an elixir of real depth. The finish is characterised by slight notes of spice that add even more depth and complexity to the wine as a whole.
