Les Plantées from Cellier Saint Benoit is a cuvée made from Poulsard grapes grown on about two hectares of vines situated on the sunny slopes of Pupillin. The terroir comprises of marl and chalky soils that impart a characteristic minerality to this wine. Harvesting is done by hand in accordance with tradition, resulting in the selection of fully-ripened grapes. The winemaking process follows the natural method with fermentation occurring spontaneously thanks to native yeasts. Maceration lasts for about two to three weeks, allowing for a gentle extraction of aromas and tannins. Ageing takes place in old, oak barrels for 12 to 18 months, adding complexity and body to the wine without dominating the fruity aromas.
On the nose, this wine reveals notes of small red fruits such as cherry and raspberry, accompanied by touches of spice and a light, smoky note. On the palate, it is delicate with a lovely freshness, fine tannins and a persistent finish that has a subtle minerality.
