Domaine des Tilleuls is an excellent name that is passed on by Burgundy connoisseurs. The 1920 family domaine is located in the heart of the village of Gevrey-Chambertin. It is now Philippe Livera’s son, Damien who runs the domaine. The vineyards are managed in a responsible, sustainable way to minimise the use of external substances. The vines, almost exclusively of Pinot Noir, are covered in grass. Special care is taken for the soil. The domaine has very beautiful plots in the appellations Gevrey village, Fixin, Côtes-de-Nuits-villages and Chapelle-Chambertin. Fermentation is long and all wines are aged in oak barrels for 11 to 18 months.
This is the Marsannay produced by Damien Livera, formerly known as Domaine des Tilleuls.
This cuvée is a 100% Pinot Noir sourced from vines planted in the village of Marsannay, located north of Fixin and Gevrey-Chambertin, on the outskirts of Dijon. The terroir of Marsannay shares many characteristics with the aforementioned villages, particularly in the soil composition, which features limestone and brown marl. These Pinot Noir vines, around forty years old, thrive on the gentle slopes of the appellation.
The harvests are manual. In the winery, Damien Livera destems the grapes before placing them in tanks for fermentation using natural yeasts. The wine is then aged in French oak barrels, with approximately 20% new wood.
The tasting experience revels aromas of pepper and red fruits like blueberry. On the palate, we find a refined and silky wine with soft tannins and a mineral finish.
