Éclat de Calcaire is crafted from clay-limestone soils typical of the Côte de Beaune and the Côte de Nuits. These mineral-rich limestones lend the wine finesse and a distinctive chalky minerality. Manual harvests are done at optimal ripeness, with strict sorting to retain only the finest fruit. Fermentation begins in open wooden vats with a gentle maceration and manual punch-downs to extract colour and aromas without over-extracting tannins. Alcoholic fermentation is triggered by native yeasts. The wine is then aged for 12 to 14 months in French oak casks, with only a small proportion of new oak so as not to overshadow the purity of the fruit.
The wine shows a clear, bright ruby-red hue. The nose is highly expressive, dominated by fresh red berries with hints of violet and delicate spice. On the palate, the attack is lively and clean, carried by a fine, structuring acidity. The tannins are smooth and silky, supporting an elegant, refined texture.
